Spinach and Goat Cheese Pizza with Roasted Garlic

I recently joined a yoga studio next to a whole foods (cliche, I know).  This is a dangerous combination, but it reminded me of this AMAZING frozen pizza crust they sell.  It's a great versatile product that doesn't have the typical preservatives found in ready-made crusts.  I created a "white sauce" with crushed roasted garlic and topped it with caramelized onions, spinach, and goat cheese.




Spinach and Goat Cheese Pizza with Roasted Garlic
1 head roasted garlic
1 red onion, sliced thinly
1 tbsp balsamic vinegar
1/4 cup thawed frozen chopped spinach
crumbled goat cheese
fresh cracked black pepper to top

Roast garlic at 400 F for 1 hour in a foil pouch.  While the garlic is cooling, saute the thinly sliced onion until caramelized, season with salt and pepper.  This should take about 20 minutes, until the onions are a deep brown color.  Finish with 1 tbsp of balsamic vinegar.

To assemble the pizza, crush the roasted garlic and spread on the bottom.  Spoon over the caramelized onions then top with the thawed spinach and goat cheese.  Top with fresh cracked black pepper.

Bake for 10-12 minutes at 375 F.  The pizza has a crispy crust, an impossibly velvety roasted garlic base, and tangy goat cheese, the perfect complement to a glass of white wine and a cozy blanket!
