Grilled Corn with Garlicky Chipotle Butter

Goodness, I love summer corn.  Grilled corn topped with a melted butter sauce is typical on our family table for Sunday night dinner.  The charred sweet corn goes great with a garlicky spicy melted butter.

Grilled Sweet Corn with a little Spicy Kick!



Grilled Corn with Garlicky Chipotle Butter
1-2 ears of corn per person
4 tbsp of unsalted butter
1 garlic clove
1/2 tsp chipotle powder**
1 tbsp agave nectar
salt and pepper to taste

Grilled Corn: Remove the silks and husks from the ears of corn.  Grill over the coals for about 2 minutes per side, or until the kernels get just a touch charred.  To finish cooking, move them to a cooler part of the grill and put the cover on top.


Butter:  Grate the clove of garlic into a microwave safe bowl.  Add the butter and microwave on high for 30-45 seconds.  Add the chipotle powder, agave nectar, and salt and pepper.  Taste and adjust any seasoning before drizzling over the charred corn!
